Can I eat now? I'm hungry. Okay, today let's cook 콩나물밥, kongnamul bap, Korean bean sprout rice, using my Cuchen rice cooker.

This is something my grandma used to cook for me all the time growing up, and I've noticed a lot of people don't really know about it. It's not as famous as bibimbap or kimchi fried rice, but it deserves way more attention. Bean sprouts, rice, and a punchy soy sauce dressing all mixed together. Simple, cheap, and so comforting.

For the rice:
- Soybean Sprouts (콩나물): 2 cups, rinsed (the main ingredient, don't skip this)
- Rice (쌀): 2 cups, washed
- Mushroom (버섯): 1 cup, sliced, optional
- Carrot (당근): 1/2 cup, julienned, optional
- Ground Beef (다진 소고기): 1/2 lb, optional protein
- Black Pepper (후추): a pinch, for the beef
- Soy Sauce (간장): 1 tsp, for the beef
- Dried Kelp (건다시마): 1 piece, for umami
- Water (물): slightly less than your usual rice-to-water ratio
For the sauce:
- Soy Sauce (간장): 3 tbsp
- Minced Garlic (다진 마늘): 1 tbsp
- Gochugaru / Chili Powder (고춧가루): 1 tbsp
- Plum Syrup (매실청): 1 tbsp
- Sesame Oil (참기름): 1 tbsp
- Green Onion & Chives (대파, 부추): a handful, chopped
The Ritual (Step-by-Step) 🥢
1. Marinate the Beef

If you're using ground beef, marinate it now with a pinch of black pepper and a little soy sauce. Keep it light since we're making a proper sauce later, this is just to season the meat itself.
2. Layer the Kelp and Rice

I already washed my rice and added it to the pot with slightly less water than I'd normally use for cooking rice, since the bean sprouts and mushrooms are going to release extra water as they cook. Add a piece of dried kelp on top for extra umami.
3. Add the Beef

Dump the marinated beef right on top of the rice.
4. Add the Vegetables

Bean sprouts first, then the mushroom, then the carrots. Now it's ready to cook.
5. Cook on High Pressure

I set my Cuchen to high pressure and cook it like sticky rice. While that's going, let's make the sauce.
6. Build the Sauce

Start with the chopped chives and green onion, then add the garlic, gochugaru, plum syrup, soy sauce, and sesame oil.
7. Mix the Sauce

Just mix everything together. It smells so good at this point.
8. Scoop and Dress

Once the rice cooker beeps, scoop everything out into a bowl. Add the sauce little by little and mix it in, just like bibimbap.
9. Eat

Was I Worried About Soggy Bean Sprouts?
Honestly, yes. I was a little worried the soybean sprouts would turn soggy after cooking under pressure with the rice. But they came out actually crunchy, not mushy at all. That texture contrast against the soft rice is exactly what makes this dish work.
This was super easy to cook using the Cuchen rice cooker. You really do just layer everything in and let it do the work while you make the sauce.
Tips & Notes
Don't skip the dried kelp. It's a small piece, but it adds a subtle savory depth to the rice that you'd otherwise miss.
Go slightly lighter on water than usual. The bean sprouts and mushrooms release liquid as they cook, so if you use your normal rice-to-water ratio, you'll end up with mushy rice.
Add the sauce gradually. Pour it in little by little while mixing, the same way you'd dress a bowl of bibimbap. You can always add more, but you can't take it back out.
Ground beef is optional. My grandma's version didn't always include meat. Skip it for a lighter, vegetable-forward version, or swap in pork if that's what you have.
FAQ
What is kongnamul bap? Kongnamul bap is a Korean dish made by cooking soybean sprouts together with rice, then mixing it with a savory soy-based sauce before eating, similar to bibimbap. It's a classic Korean home-style comfort food that's less well known outside of Korea compared to dishes like bibimbap or kimchi fried rice.
Will the bean sprouts get soggy? No, if you cook them along with the rice under pressure (like in a rice cooker's sticky rice or high pressure setting), the bean sprouts stay crunchy rather than turning mushy.
Can I make kongnamul bap without a rice cooker? Yes, you can make it on the stovetop in a pot with a tight-fitting lid, though a rice cooker with a pressure setting makes it more hands off and consistent.
Can I make this vegetarian? Yes, simply skip the ground beef. The dish is traditionally centered on the bean sprouts and rice, so the meat is optional.
What do I eat with kongnamul bap? It's a complete meal on its own once mixed with the sauce, but you can add a side of kimchi or a simple banchan if you want something extra.
The Experience 💭
This recipe means a lot to me because it's such a direct memory of my grandma's cooking, the kind of dish that doesn't need to be fancy to be unforgettable. I'm actually impressed with my own cooking on this one. The bean sprouts stayed crunchy, the sauce tied everything together, and it came out exactly the way I remembered it.
If you're interested in this recipe, let me know in the comments, or just come back to this post any time. I have another recipe using the Cuchen coming soon, so stay tuned for that.
