Corned Beef Guisado
Ingredients
- 340 340g corned beef (1 can)
- 1 large potatoes, peeled and diced
- 0.75 cup frozen mixed vegetables
- 1 medium shallot (or 1 medium onion)
- 4 cloves garlic, minced
- 1 teaspoon ground black pepper
- 0.5 teaspoon salt (adjust to taste)
- 2 tablespoons cooking oil
Instructions
- Heat oil in a large pan over medium heat. Add diced potatoes and cook, stirring occasionally, until golden and cooked through (8–10 mins). Remove and set aside.
- In the same pan, sauté garlic until fragrant (30 seconds).
- Add sliced shallot (or onion) and cook until soft and translucent.
- Add frozen mixed vegetables and stir-fry 2–3 mins until heated through.
- Add corned beef and break it up gently. Stir well.
- Return potatoes to the pan. Sprinkle in black pepper and salt. Cook 3–5 mins until combined and hot.
- Serve warm with rice or bread.
